Welsh Watercress and Potato Soup Recipe

Watercress soup dish Welsh style

This is a traditional Welsh recipe for the classic soup dish of watercress and potatoes.

Ingredients

2 bunches watercress, finely chopped
450g potatoes, peeled and finely diced
1 liter strong vegetable stock
1 bouquet garni
Salt, black pepper and nutmeg, to taste
A little cream, to serve

Recipe Instructions

Cook the soup.
Put all the ingredients into a large pan, season with salt, pepper and nutmeg and bring the mixture to the boil. Let the soup boil for 30 minutes then remove the bouquet garni. Remove the soup from the heat and let it cool down slightly.

Blend the soup.
Pour the soup into a food processor and liquidize.

Reheat the soup.
Return the soup to the pan and let it heat up gently until it has warmed through.

Serve.
Serve the soup in warmed bowls and garnish with a swirl of cream.
