Watercress with Spring Onion Soup Recipe

Quick and easy-to-make watercress soup

This soup is incredibly easy to make and takes less than 20 minutes to prepare, perfect for unexpected guests or busy week nights.


2 x 85g bags of watercress
6 spring onions, trimmed and sliced
450g potatoes, peeled and thinly sliced
150ml milk
600ml vegetable stock
Pinch of grated nutmeg
Salt and freshly ground black pepper

Recipe Instructions

Make the soup.
Bring the stock, onions and potatoes to the boil in a large pan. Let the mixture boil for 5 – 6 minutes until the potatoes are slightly tender. Add the watercress and simmer for another 3 – 4 minutes covered until the leaves are tender and wilted. Season the soup well with salt and pepper.

Blend the soup.
Pour the soup into a food processor and blend until it is smooth. Add the milk and nutmeg and blend some more until it is well combined.

Reheat the soup.
Pour the soup into a new saucepan and gently reheat it until it is piping hot.

Spoon the soup into bowls and top with a little Greek yoghurt and a sprig of watercress.
