Watercress Sauce Recipe

Another simple watercress sauce recipe
Yield: 4    Preparation Time: 15 mins    Cooking Time: 10 mins
This recipe makes an extremely tasty watercress sauce which is prefect to serve with any fish dish or warm salad.


2 x 85g packs watercress, chopped
2 small shallots, very finely chopped
1 stick celery, very finely chopped
½ glass dry white wine
75ml vegetable stock
25g butter
150ml single cream
1 bay leaf

Recipe Instructions

Make the sauce.
Melt the butter in a saucepan and fry the shallots and celery for 2 – 3 minutes over a gentle heat until they are tender. Add the wine, the stock and the bay leaf and simmer for another 2 – 3 minutes. Remove the bay leaf and pour in the cream and the chopped watercress. Heat the sauce until it is piping hot, season with salt and pepper and serve.
