Watercress Sandwiches Recipe

Hearty watercress sandwich

A typical and classic English sandwich that can be served as a side dish or appetizer.


16 thin slices white bread
32 watercress sprigs, plus extra for garnishing

For the watercress butter;
125g unsalted butter, softened
25g watercress leaves, finely chopped
1 teaspoon fresh lemon juice
¼ teaspoon freshly ground black pepper
Pinch cayenne pepper

Recipe Instructions

Make the butter.
Blend the butter in a food processor with the watercress leaves, lemon juice, black pepper and cayenne pepper. Blend until the mixture is very smooth. Let the butter stand for 30 minutes at room temperature.

Make the sandwiches.
Spread 1½ teaspoons of the butter on each slice of bread and cut 4 rounds (4cm rounds) from each slice. Arrange a watercress sprig on each half of the round letting a little extend over the edge and place the remaining rounds on top.

Serve the sandwiches on a tray and garnish with the extra watercress sprigs.
