Watercress, Goats’ Cheese and Shallot Dressing Recipe

A tasty watercress dressing

This is a deliciously tasty sauce that can be served with any salad of your choice or with beets.

Ingredients

1 bunch watercress, thick stems removed
4 tablespoons goats’ cheese
1 large garlic shallot, finely chopped
60ml olive oil
10 sprigs thyme, leaves only
Fresh lemon juice
Salt and freshly ground pepper

Recipe Instructions

Make the lemon and oil mixture.
Whisk together the olive oil, shallot, ½ the lemon juice, thyme and salt and pepper. Set it aside.

Make the sauce.
Place the watercress and the goats’ cheese into a blender and blend until smooth. Add the lemon and oil mixture and blend again for a few seconds.
