Watercress, Egg and Asparagus Salad Recipe

This is a delicious and easy vegetarian salad that can be served as a main meal.

Ingredients

4 oz asparagus
½ lb watercress
1 egg, hard boiled and cut into quarters
Red onion, sliced
4 oz cherry tomatoes

For the dressing;
2 tablespoons mayonnaise
½ tablespoon white vinegar
½ tablespoon mustard

Recipe Instructions

Cook the asparagus.
Cut the asparagus spears into thirds and cook in a saucepan of boiling water until tender. Drain the asparagus and refresh them with cold water.

Make the dressing.
Mix together all the dressing ingredients and whisk to combine.

Make the salad.
Place the watercress into a salad bowl and top with the egg quarters. Add the asparagus and sprinkle over the red onion and cherry tomatoes. Drizzle the dressing over the salad and serve.
