Watercress, Apple and Beetroot Salad Recipe

A delectable watercress salad recipe with beetroot

This is an incredible easy salad to make and it is perfect to serve as a light side dish with any meal.


Bunch of watercress
2 red apples; quartered, cored and finely sliced
4 small red beetroot, scrubbed and very finely sliced (leaves reserved)
1 bag of rocket, washed
1 small lemon
Small handful of pea shoots
Extra virgin olive oil
Small bunch of fresh marjoram, leaves picked
Sea salt and freshly ground black pepper

Recipe Instructions

Make the dressing.
Squeeze the lemon juice into a jar and add 3 times the amount of the olive oil. Season with salt and pepper, put the lid on the jar and shake it to emulsify the ingredients.

Make the salad.
Place the rocket, watercress, pea shoots, apples, beetroot and beetroot leaves into a large serving bowl. Drizzle over the dressing, add the marjoram and toss together well.
