Watercress and Stilton Cheese Soup Recipe

Simple and tasty watercress soup

This simple and tasty cheesy soup gets a burst of color and a zingy edge from the fresh watercress.


2 bunches of watercress, chopped
1 onion, chopped
450g potatoes, peeled and diced
2 cloves garlic, chopped
80g stilton cheese
200ml double cream
1.2 liters chicken stock
25g butter
Freshly grated nutmeg
Black pepper

Recipe Instructions

Cook the soup.
Heat the butter in a large saucepan and fry the onion and garlic for 5 minutes until it has softened. Add the stock and potatoes and bring the mixture to the boil. Simmer the soup for 15 – 20 minutes until the potatoes are tender. Add the watercress and nutmeg and simmer for another 2 – 3 minutes.

Blend the soup.
Pour the soup into a food process and blend it adding the Stilton in batches until the soup is smooth. Add the cream and blend a little more.

Reheat the soup.
Return the soup to the stove and reheat it gently. Check the seasoning and adjust if necessary.
