Watercress and Spinach Leaf Salad with Orange Dressing Recipe

A hearty spinach watercress salad

This combination of spinach and watercress make a delightfully crisp salad with the oranges adding a nice citrus taste.


2 ounces fresh watercress, washed and tough stems discarded
12 ounces fresh spinach, washed and tough stems discarded
2 medium oranges
1 teaspoon orange zest
1 teaspoon Dijon mustard
1 teaspoon granulated sugar
3 tablespoons extra virgin olive oil
2 tablespoons raspberry vinegar
¼ teaspoon salt
¼ teaspoon fresh ground black pepper

Recipe Instructions

Prepare the spinach and watercress.
Place the spinach and watercress into a bowl and cover with 2 trays of ice cubes. Put the bowl in the fridge and let it chill for ½ hour. Once chilled, throw out the ice cubes and drain the spinach and watercress. Break the spinach up into smaller bite-size pieces.

Prepare the oranges.
Remove the skins from the oranges and slice the oranges thinly across the grain. Cut these in half. Discard the skins and the seeds.

Make the dressing.
Whisk together the olive oil, raspberry vinegar, Dijon mustard and sugar until the ingredients are well incorporated. Season the dressing with salt and pepper to taste.

Make the salad.
Put the spinach and watercress into a large salad bowl and add the oranges. Finely grate zest from one orange over the top. Pour the salad dressing over the salad and toss well to coat.
