Watercress and Potato Soup Recipe

A hearty watercress soup recipe

This is a deliciously creamy and tasty soup recipe that is very easy to make and it is just as delicious served hot or cold.

Ingredients

2 bunches watercress
450g potatoes, peeled and sliced
1 onion, chopped
600ml chicken stock
40g butter
425ml yoghurt
1 egg
Salt and pepper

Recipe Instructions

Cook the soup.
Heat the butter in a large saucepan and fry the onions until they have just softened but have not browned. Add the potatoes and the watercress and stir together. Cook for 3 minutes over a low heat. Add the stock and bring the soup up to a simmer. Simmer for 20 minutes.

Make the yoghurt mix.
Mix together the yoghurt and the egg.

Blend the soup.
Remove the soup from the heat and pour it into a food processor. Blend the soup adding the yoghurt mix in slowly.

Serve.
This soup can be served hot or cold.
