Watercress and Mushroom Soup Recipe

Delicious mushroom soup with a twist

This soup is thick and creamy with the mushrooms adding a nice bit of texture.

Ingredients

2 tablespoons chopped watercress
200g mushrooms, thinly sliced
1 onion
550 ml vegetable stock
2 cloves garlic, crushed
25g corn flour
2 tablespoons olive oil
Salt to taste

Recipe Instructions

Cook the soup.
Heat the oil in a frying pan and fry the onion and garlic gently until soft. Mix together the corn flour with a little water making a paste and whisk this into the stock. Add the stock to the onion and garlic mixture and bring the mixture to the boil stirring constantly. Once the soup has thickened add the mushrooms and the watercress and simmer the soup for another 5 minutes.

Serve.
Serve the soup with crusty bread.
