Watercress and Endive Salad with Citrus Fruits Recipe

A deliciously fruity, healthy and colorful light salad that can be served as a light meal on a warm summer day.


1 bunch watercress
1 head endive
2 oranges, peeled and sectioned
2 kiwi fruits, peeled and sliced
1 grapefruit, peeled and sectioned

For the dressing;
2 tablespoons balsamic vinegar
1 tablespoon shallots, finely chopped
1/3 cup grape seed oil
Salt and freshly ground black pepper

Recipe Instructions

Make the dressing.
Put all the dressing ingredients into a jug with a lid and shake the jug well to emulsify the ingredients. Season the dressing with salt and pepper to taste.

Make the salad.
In a large bowl, toss together the watercress, endive and half of each of the fruits with the salad dressing. Divide these greens between four serving bowls then divide the remaining fruit between the four bowls, placing the fruit on top of the greens.
