Watercress and Carrot Stir Fry with Noodles Recipe

A very healthy meal recipe

Watercress is packed with nutrients and is usually served raw but in this recipe it is slightly cooked in a stir fry with noodles and it is delicious.

Ingredients

1 bunch watercress, washed and roughly chopped
3 carrots, peeled and sliced into ½cm slices
3 spring onions, trimmed and finely sliced
250g firm tofu, cut into 1cm cubes
1 tablespoon olive oil
1 tablespoon soy sauce
Small handful sesame seeds

Recipe Instructions

Make the stir fry.
Heat the oil in a wok and add the onions and carrots. Cook for 2 minutes until the carrots are starting to soften. Add the tofu and cook for another 2 minutes stirring continuously. Add the watercress and cook for another 1 minute. Pour in the soy sauce and stir well. Sprinkle over the sesame seeds.

Serve.
Serve with Japanese or Chinese noodles.
