Spanish Watercress Soup Recipe

Watercress soup Spanish style

This recipe is a favorite in the Canary Islands and the variety of ingredients give this soup and incredibly tasty yet different flavor.


½ kg watercress, chopped
½ kg potatoes, chopped
¼ kg pork ribs
1.4 kg white beans
1 tomato, chopped
1 onion, chopped
1 green pepper, chopped
150gr yam
2 tender corns
3 garlic cloves, ground
½ small cup of olive oil, saffron, salt and water.

Recipe Instructions

Prepare the white beans.
Put the white beans into a bowl of water and leave them to soak overnight. This will make them soft.

Cook the soup.
Put 3 liters of water into a large pot over a moderate heat. Add the ribs, white beans, corns and yam and cooked until half way done. At the halfway point, add the watercress, potatoes, onion, tomato, pepper, salt, saffron, garlic and olive oil. Cook for longer until all the ingredients are completely done.
