Smoked Mackerel, Watercress and Orange Salad Recipe

A delectable watercress salad recipe

This is a wonderfully light, tasty and healthy salad that can be served as a light meal or as a starter.


85g watercress
225g smoked mackerel fillets with peppercorns, skinned
2 oranges
2 heads chicory, trimmed and broken into leaves
2 teaspoon wholegrain mustard
1 teaspoon clear honey
1 tablespoon olive oil

Recipe Instructions

Prepare the oranges.
Remove the skins of the oranges and cut between the white membranes to remove all the segments. Squeeze the remaining pieces of orange over a bowl removing the juice and set it aside.

Prepare the mackerel.
Remove the skin of the mackerel and break it into bite sized bits.

Make the dressing.
Whisk together the reserved orange juice, oil, mustard and honey with a little salt and ground black pepper.

Make the salad.
Place the watercress, chicory, mackerel and orange segments into a large salad bowl.
Drizzle over the dressing and serve.
