Simple Watercress Soup Recipe

A simple watercress soup dish
Yield: 4    Preparation Time: 15 mins    Cooking Time: 35 mins
This is a very simple but extremely tasty soup to make where all the ingredients are combined and cooked in one pot.


170g watercress, roughly chopped
1 onion, peeled and roughly chopped
250g potatoes, peeled and diced
600ml chicken stock
25g butter
50ml cream
Salt and black pepper

Recipe Instructions

Cook the soup.
Heat the butter in a large pan and cook the onion until it is soft but has not colored. Add the potatoes and the stock and cook for 15 – 20 minutes until the potatoes are almost cooked. Add the watercress 5 minutes before the final cooking time and stir together well.

Blend the soup.
Remove the soup from the stove and let it cool a little. Once cooled, place the soup in a food processor with the cream and liquidize. If the soup seems a little too thick you can always add a little milk.

Reheat the soup.
Pour the soup back into the saucepan and season with salt and pepper. Reheat gently until piping hot.
