Salmon Watercress Pasta Recipe

Watercress meal with salmon
Yield: 4    Preparation Time: 5 mins    Cooking Time: 20 mins
This poached salmon with a creamy sauce and fresh pasta dish is simple and easy to make.

Ingredients

85g watercress, roughly chopped
4 x 75g salmon fillets
350g penne pasta
200ml crème fraise
2 teaspoons pesto sauce
Zest and juice of 1 lemon
Salt and freshly ground black pepper

Recipe Instructions

Cook the pasta.
Bring a large pot of water to the boil and add the pasta. Boil the pasta for 8 – 10 minutes until it is al dente.

Cook the salmon.
Place the salmon skin side up in a frying pan and add 100ml water. Cover the frying pan and slowly bring the water to the boil. Reduce the heat and let the salmon simmer for 5 minutes until it is cooked. Remove the salmon from the pan, remove the skin and flake the flesh.

Make the sauce.
Put the crème fraise in a small saucepan and add the lemon and the pesto. Bring the mixture to the boil and then simmer for 5 minutes uncovered until the liquid has reduced slightly. Season with salt and pepper to taste.

Serve.
Drain the pasta and add the watercress, salmon and crème fraise. Mix together well and divide it between the four serving plates. Top with the chopped watercress to garnish.
