Salmon and Watercress Parcels Recipe

A hearty watercress parcel dish

Delicious salmon and watercress filled parcels served with green beans and baby new potatoes make a stunning main meal.


80g watercress, woody stems removed
4 skinless salmon fillets
50g butter, softened
500g short crust pastry, rolled out and cut into four equal squares
1 egg, beaten

Recipe Instructions

Preheat the oven to 190C.

Make the paste.
In a food processor whizz together the watercress, butter and some seasoning to make a rough paste.

Make the parcels.
Place a salmon filled on each pastry square and cover with a layer of the watercress paste. Brush the edges of the pastry with the egg and fold them over to join together so the salmon is completely enveloped. Trim off any excess pastry.

Cook the parcels.
Glaze the parcels with the egg and place in the oven. Bake for 20 – 25 minutes until they are brown and crisp.

Serve the parcels with green beans and baby new potatoes.
