Roast Pork with Apples and Watercress Recipe

Delicious watercress main dish

This tasty pork and apple dish is accompanied by fresh watercress and deliciously smooth wine gravy.


1.5 kg loin of pork
Apples, cored
150ml dry white wine
150ml chicken stock
40g butter
1 sprig fresh rosemary
Salt and pepper, to taste
1 sprig watercress, to garnish

Recipe Instructions

Preheat the oven to 180C.

Cook the pork.
Rub the pork with the butter and sprinkle it with salt. Place it on a roasting tray and add the rosemary sprig. Place in the oven and roast for 2 hours until cooked.

Prepare the apples.
Make a shallow cut through the skins of the apples and place them in a roasting tin. Baste the apples with some of the fat from the cooking pork and place the apples on the lower shelf in the oven and bake for the last 30 minutes of the cooking time.

Make the wine gravy.
Drain off most of the fat from the roasting tin leaving the meat juices. Pour the meat juices into a small saucepan and add the wine. Bring the liquid to the boil and stir in the stock. Boil for 2 – 3 minutes.

Arrange the baked apples around the pork on a serving platter and garnish with the watercress. Serve with the wine gravy.
