Roast Fillets of Cod with Watercress Potato Mash Recipe

Watercress potato mash meal

This is a delicious fish dish served with mashed potatoes that have been infused with watercress and the juices of the cooked fish.


80g watercress, stems discarded
2 large cod fish fillets
4 potatoes, peeled and cut into chunks
2 cloves garlic, chopped
5 tablespoons olive oil
1 lemon
Salt and freshly ground black pepper

Recipe Instructions

Preheat oven to 200C.

Boil the potatoes.
Bring a large pan of salted water to the boil and throw in the potatoes. Cook until they are tender then drain off the water. Remove the potatoes from the pan and set them aside.

Cook the fish.
Pour a tablespoon of olive oil over a baking tray and lay the fish, skin side down, on the tray. Pour another tablespoon of olive oil over the flesh of the fish. Squeeze over the lemon juice and season the fillets with salt and pepper. Place the fish in the oven and bake for 10 – 15 minutes until the flesh of the fish flakes easily. Remove them from the baking tray.

Make the mash.
Put the remaining olive oil and garlic into the empty potato pan and heat for a couple of minutes. Add the potatoes and the watercress and use a fork to mash it all together.
Pour the juices from the baking tray into the mixture, season with salt and pepper and stir it all together.

Place the potatoes on a warmed plate and lay the fish over the top.
