Oriental Watercress Soup Recipe

A mouth-watering Oriental soup recipe

This oriental soup is extremely light which makes it perfect for a starter dish or a light lunch.


5 bunches of Watercress
1 tablespoon crunchy peanut butter
17oz vegetable stock
17oz water
2 tablespoons oil
2 teaspoons turmeric
1 tablespoon Dark Soy sauce
1 large chunk ginger
A pinch of nutmeg
Bean curd

Recipe Instructions

Make the turmeric mixture.
Mix together the salt, pepper, nutmeg and turmeric in a bowl with the dark soy sauce to make a paste. Add a ladle of stock and stir together well.

Cook the soup.
Heat the oil in a saucepan and fry the ginger for a few seconds. Stir in the peanut butter rapidly as it will stick to the bottom of the pan. Add the stock stirring rapidly and stir in the turmeric mixture. Add the watercress and cook for 2 – 3 minutes until the watercress is cooked. Add the bean curd one minute before the end of the cooking process.
