Lemon Marinated Courgettes with Watercress Recipe

Delectable watercress side dish

This is an incredibly easy salad to make and it has a Mediterranean feel and taste.


2 bunches watercress, large stalks trimmed
4 courgettes (2 yellow, 2 green)
1 tablespoon chopped chives
4 tablespoons olive oil
Juice of one lemon, and finely grated zest.
2 tablespoons toasted pine nuts
100g fresh Parmesan shavings
Salt and freshly ground black pepper

Recipe Instructions

Prepare the courgettes.
Slice the courgettes at 45 degrees into 2mm rounds and place them in a bowl with the lemon juice, lemon jest, chives and olive oil. Season with salt and freshly ground black pepper and mix together well. Leave to stand for 5 minutes.

Make the salad.
Add the watercress and pine nuts to the courgettes and mix well.

Divide the salad between the 4 plates and shave slices of the Parmesan cheese over the top.
