Indian Chickpea and Watercress Side Dish Recipe

This watercress and chickpea stir-fry is a spicy side dish that can even be used as a tasty filling for sandwiches.


3 cups watercress, washed and chopped
½ cup dried chickpeas
3 green chilies, chopped
1 teaspoon finely chopped garlic
½ cup shallots, chopped
1 teaspoon grated ginger
2 teaspoons oil
1 tablespoon plain yogurt
2 tablespoons non-fat milk powder
½ teaspoon cumin seeds
¼ teaspoon cayenne powder
¼ teaspoon turmeric powder
¼ teaspoon garam masala

Recipe Instructions

Prepare the chickpeas.
Soak the dried chickpeas in salted water for 8 hours until they are soft. Drain the chickpeas and reserve the liquid. Set them aside.

Cook the ingredients.
Heat the oil in a saucepan and stir in the cumin until it is toasted. Add the ginger, garlic, chilies, shallots and a pinch of salt and cook until the onions have turned a light brown color. Add the turmeric and cayenne pepper and stir in for 5 seconds. Add the greens and cook for 3 minutes until they have wilted. Add the chickpeas and ¼ cup of the chickpea liquid, the yogurt and the milk powder. Simmer for 2 minutes and check the seasoning, adjust if necessary. Add the garam masala, stir in then remove the saucepan from the heat.

Serve with roti rolls, rice or bread.
