Hot Watercress Sauce Recipe

Hot sauce made from watercress

This sauce is extremely simple to make and it goes exceptionally well with poached or grilled fish.


1 bunch watercress
1 teaspoon runny honey
240ml natural yoghurt
1 teaspoon lemon juice
Salt and black pepper

Recipe Instructions

Cook the watercress.
Bring a large pan of salted water to the boil and add the watercress. Blanch for 3 minutes and then drain very well. Press as much of the water out as possible.

Make the sauce.
Place the watercress and remaining ingredients into a blender and process until smooth.

Reheat the sauce.
Transfer the sauce to a small saucepan and heat it up gently making sure it does not boil.
