Grilled Pepper and Watercress Salad Recipe

A peppery watercress treat

This salad offers something a little different with the grilled peppers and delivers a little zing.


2 bunches watercress
100g physalis
2 red peppers
50g rocket leaves
1 head radicchio
1 star fruit, sliced
6 salad onions

For the dressing;
2 tablespoons olive oil
2 tablespoons chili oil
1 teaspoon sugar
½ clove garlic, crushed
1 teaspoon Dijon mustard
Salt and finely ground black pepper

Recipe Instructions

Grill the peppers.
Place the peppers on a baking tray and place them in the oven under the grill. Once they are fairly blackened remove them from the oven and put them into a plastic bag and tie the bag closed. Once the peppers have cooled, remove the skins and the pips and chop them up roughly.

Make the dressing.
Put all the dressing ingredients into a jar with a lid. Close the lid and shake it well to mix the ingredients.

Make the salad.
Place the peppers into a large salad bowl and throw in all the other salad ingredients. Drizzle over the dressing and toss together well.
