Green Soup Recipe

A delectable watercress soup
Yield: 4    Preparation Time: 5 mins    Cooking Time: 15 mins
This is a watercress and pea soup. The sweetness of the peas complement the peppery watercress perfectly making this soup incredibly tasty.

Ingredients

100g watercress
1 onion, finely chopped
1 potato, cut into small chunks
300g fresh peas
500ml vegetable stock
1 clove garlic, roughly chopped
1 tablespoon olive oil
100ml double cream
Leaves from 2 mint sprigs, plus extra to garnish

Recipe Instructions

Cook the vegetables.
Heat the oil in a large frying pan and add the onion and garlic. Fry for 5 minutes until the onions are soft. Add the potatoes, stock and 500ml water and simmer for 7 minutes until the potatoes are slightly soft.

Make the soup.
Throw in the peas and watercress and stir together. Cover the frying pan and let the soup simmer for 3 minutes. Add the mint leaves and blitz with a hand blender until the soup is smooth. Stir in the cream and season well with salt and pepper.

Serve.
Spoon the soup into bowls and scatter over a little mint and some cracked black pepper.
