Easy Watercress Soup Recipe

Easy-to-prepare watercress soup recipe

A smooth and creamy watercress soup that is easy to make and cooks in one pot which means less clean up time.


Bunch watercress
1 medium potato, diced
1 medium onion, sliced
4 tablespoons cream
1 pint vegetable stock
25g butter
4 tablespoons milk
Salt and black pepper

Recipe Instructions

Cook the soup.
Heat the butter in a medium saucepan and fry the onions for 2 minutes. Add the potato and cook for another 3 minutes covered stirring occasionally. Add the stock and bring the mixture to simmering point. Simmer for 10 minutes until the potatoes start to soften. Add the watercress and simmer for a further 5 minutes.

Blend the soup.
Remove the soup from the heat and stir in the milk and cream. Pour into a food processor and blend until smooth.

Reheat the soup.
Return the soup to the pan and heat gently over a low heat until piping hot.

Adjust the seasoning if necessary and serve with a swirl of yoghurt or cream.
