Creamy Watercress Soup Recipe

A hearty and creamy soup dish

Watercress varies widely in flavor depending on a number of factors so it is always a good idea to taste the watercress you have to determine how much you want to use in your soup.


1 bunch watercress, washed and coarsely chopped
1 cup yellow onions, chopped
3½ cups vegetable stock
1 tablespoon light olive oil
¾ cup light cream
1 teaspoon fresh lemon juice
¼ teaspoon salt
Pinch of ground black pepper

Recipe Instructions

Make the soup.
Sauté the onions in olive oil until they are soft and translucent. Add the vegetable stock and bring the mixture to simmering point. Let the mixture simmer for 2 minutes then add the watercress and continue to simmer for another 3 minutes until the watercress wilts. Stir in the light cream.

Blend the soup.
Puree the soup with a hand held immersion blender or transfer it to a food processor and blend it in batches.

Re-heat the soup.
Season the soup with salt, pepper and lemon juice and re-heat it over a low heat to serving temperature.
