Chinese Watercress Soup with Pork, Dates and Seafood Recipe

A hearty Cantonese watercress soup

The dried cuttlefish or octopus pieces are the star ingredients of this Cantonese slow cooked tasty and nutritious soup.


150g watercress, washed and drained
150g lean pork
2 dried honey dates
6 dried red dates
2-3 small pieces of dried cuttlefish or dried octopus
1.5 liters water
2 tablespoons Chinese wolfberry/goji berry
Salt to taste

Recipe Instructions

Prepare the pork.
Put the pork into a large bowl and pour over boiling water. Let the pork sit in the boiling water for a few minutes and then rinse with clean water. This will remove any excess fat.

Make the soup.
Bring a large pot of water to the boil and add the pork, dried cuttlefish/octopus, watercress, honey dates, and the red dates. Reduce the heat and let the soup simmer gently for 3 – 4 hours. The soup will be ready to serve in 2 hours but the longer it can simmer the better. During the final hour of cooking, add the Chinese wolfberry/goji berry and season the soup with a little salt 5 – 10 minutes before serving.
